Wifey Wednesday - Quick & Easy Oatmeal ChocoChip Cookies

Fun fact… I LOVE cooking. 
I'm not going to brag and say I'm the best, (because i'm not), but I do enjoy it. And I'm not food-wise or ingredient-wise enough to just throw stuff together and know that it will taste good…but hand me a recipe and boy-oh-boy I will take that sucker down!

As  a new wife, I get to cook for my sweet husband whenever I want, which also means, I get to learn a lot!! Whether it's a treat or dinner, I've decided that (at least for the month of April) I'm gonna start sharing some old recipes that I love, and the new ones that I've learned to love! 

This particular recipe came from my boss a few years ago. He brought them in to work, and after one bite, I fell in love. I asked for the recipe so he grabbed a piece of receipt paper and scribbled it down. Call me sexist, but I was wildly impressed that a MAN not only baked amazing cookies, but had the recipe memorized. I used that scribbled recipe forever until my mom typed it up nice and clear. She renamed them "Lexi Loo's Oatmeal Chocolate Chip Cookies", but since technically it's not really mine, I will give recipe ownership back:

"Brad's Oatmeal Chocolate Chip Cookies"


Pre-heat oven to 350 degrees

1 cup brown sugar
1 cup white sugar
½ cup butter
½ cup shortening
2 eggs
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 ½ cups flour
3 cups oatmeal
Chocolate chips - As many as your heart desires
(I prefer Ghiradelli's milk chocolate)

 Cream:
1 cup brown sugar
1 cup white sugar
½ cup butter
½ cup shortening
 Add:
2 eggs
1 tsp. vanilla
Stir in:
1 tsp. salt
1 tsp. baking soda
1 ½ cups flour
 Add:
3 cups oatmeal
Chocolate chips

Bake at 350 for 10 minutes.

Add a mug of milk, and wa-la! Husband Approved!!
